Each month, Chef Carlos Gaytán takes a journey through the flavors of Mexico, selecting a different state as his inspiration.

From its rich traditions to its bold ingredients, he creates a special dish that brings the essence of each region to life. But the experience doesn't stop at the plate.

We are proud to showcase exclusive works from talented Mexican artists, specially designed to complement each culinary creation. A celebration of culture, art, and gastronomy, one state at a time.

This month, we honor Michoacán.

The menu includes the renowned Corunda (corn masa tamal, black beans, corn salsa, queso), followed by Carnitas Tacos (Pork carnitas, handmade corn tortillas, salsa tatemada, pickled carrot, cilantro, onion, lime, fresco, sour cream, chile de árbol salsa, tomatillo). 

An original artwork completes the journey, "Eternal Michoacán" is an original illustration created for Tzuco by Michoacán artist Mariana Fraga . It pays tribute to the state’s cultural and natural richness through three emblematic symbols: the Day of the Dead (a living tradition that binds memory and community), the Danza de los Viejitos (wisdom, joy, and festive spirit), and the monarch butterfly (Michoacán’s icon of migration, life, and transformation).
