From its rich traditions to its bold ingredients, he creates a special dish that brings the essence of each region to life. But the experience doesn't stop at the plate.

This month, we honor Nayarit
A coastal Mexican state celebrated for its vibrant flavors, indigenous roots, and bountiful Pacific waters, Nayarit is where tradition and nature meet in perfect harmony. From the Huichol Sierra to the golden shores of San Blas, its cuisine is a tapestry of bold spice, fresh seafood, and ancestral techniques.

Chef Carlos Gaytán pays tribute to this dynamic region with two dishes that evoke Nayarit’s soul.

The Camarones Cucaracha—a beloved beachside classic—features crispy shrimp dusted in rice flour, served with a Huichol-style beurre blanc infused with citrus zest, chives, and black radish. It’s fiery, tangy, and utterly addictive.

The Chicharrón de Pescado, inspired by the tranquil lake of Santa María del Oro, offers golden-fried fish paired with poblano-pistachio aioli, a crisp tomato salad, red cabbage, and warm tortillas—an homage to lakeside meals shared in good company.

An original artwork completes the journey, featuring Huichol colors and motifs, the silhouette of a sunlit beach, and a subtle nod to Tlaxtiulli—a ceremonial shrimp atole—bringing the sacred and the celebratory together.
