Tabasco is one of the most ancient culinary territories in Mexico, where cacao was born, where the chile amashito grows wild, where the coast and the river meet and give you seafood unlike anywhere else. The lobster tostada is my conversation with that abundance. The sea, the heat, the depth that Tabasco has always carried.
