BACK TO MY ROOTS
Every month, Chef Carlos Gaytán goes back. Back to a state, a market, a memory... somewhere in Mexico that shaped him. He studies it, tastes it, and distills it into dishes that tell its story.
Inspired by his travels through the streets of Mexico City, Chef Carlos has created a Ribeye Taco: thinly sliced ribeye, green and morita salsa, molcajete-marinated grilled onions, and a chihuahua cheese crust, served on a handmade corn tortilla. Also on the menu this month is Sopa de Tortilla - a heart-warming soup to get you through Chicago’s second winter.
$1 of each menu item sold will be donated to RISE Children's Home in Mexico.

“Mexico City is overwhelming by nature. It is layered, loud, colorful, contradictory, and constantly in motion.
By merging Lotería and the canals of Xochimilco, the illustration becomes a kind of card — part game, part landscape — where symbols float, people navigate, and tradition remains alive.
The contrasts in color reflect the city itself: bold yet balanced, chaotic yet intentional, vibrant but rooted.”
